Has anyone found a way to connect band data from the IC 7610 to the Antenna Genius 8X2?

You need some kind of CI-V to BCD converter unit.
I did a quick google search and there's a choice between kits and aftermarket devices depending on what you're into.

I don't have any personal experience with this so I can't recommend a specific product myself.
